Seaside Café Conch Burger
With Caribbean Calypso Sauce
Served at the Seaside Cafe - Ocean Club West - Chef Nicola Giordano
Ingredients
6 oz ground conch meat
1/2 oz diced red pepper
1/2 oz diced green pepper
1 egg white
1/2 oz diced red onion
1/2 oz diced celery
1 oz half and half
1 oz of flour
Pinch of black pepper, chili
powder and Caribbean spice
(as you choose)
1 hamburger bun
1 slice of red onion
1 leaf of red lettuce
1 slice tomato
3 slices of dill pickle
Method
In a large bowl, mix together ground conch
meat, diced red pepper, diced green pepper,
egg white, diced red onion, diced celery,
half and half, flour, black pepper, chili and
Caribbean spice.
Grill Pattie for 5 to 10 minutes per
side on the hot grill, or until well done.
Serve on bun with your favourite
condiments.
